Tania’s Spelt Wheat, Wattle Seed and Walnut Biscuits

This week one of our lovely CGP community members, Tania, has shared with us a delish biscuit recipe using our new Tuerong Farm biodynamic spelt flour. Perfect with a cup of tea in the afternoon!


Ingredients:

  • 4oz Butter
  • 4oz Coconut Sugar
  • 2 tbsp Walnut Oil
  • 1 Egg
  • Vanilla
  • 1 Cup Spelt Flour
  • ½ cup White SR Flour
  • ½ cup Wattle Seeds (roasted and ground)
  • ½ cup Rolled Millet
  • ½ cup Chopped Walnuts
  • 1 tbsp Cocoa Powder
  • 1 tbsp Spices (cinnamon, nutmeg, cardamon, all spice)
  • Pinch of Salt

Method:

  1. Cream butter and sugar together. Then add egg, walnut oil, vanilla, and a pinch of salt.
  2. Stir through wattle seeds, millet, and walnuts.
  3. Then add flours, cocoa powder, and spices that have been sifted together. Lightly work through the mixture.
  4. Roll into balls, press with a fork. Bake for approximately 12–15 minutes at 160ºC.
