Flourless Beetroot and Chocolate Cake

This ooey gooey cake is a delicious morning tea, dessert or snack. It’s rich and moist, with the earthy sweetness of beetroot perfectly complementing the indulgent flavour of chocolate.

Beets are a seasonal vegetable with their peak season being June-August. But if beetroot isn’t your thing, carrots or zucchini make the perfect substitution.

Perfect for any occasion, it’s a delightful way to celebrate the joys of homemade goodness.

Ingredients:

  • 450g cooked unseasoned beetroot, peeled and pureed

  • 6 large free-range eggs

  • 6 tablespoons honey

  • 1.5 teaspoons vanila extract

  • 1.5 tablespoons raw cocoa powder, plus extra for dusting

  • 2 tablespoons gluten-free baking powder

  • Pinch of salt

  • 190g ground almonds

  • 190g dark chocolate (70% cocoa solids) broken into small pieces

  • 6 tablespoon cold-pressed olive oil

* This cake is naturally gluten-free and dairy-free (with use of dairy-free dark chocolate. 

Methods:

  1. Preheat the oven to 180oC. Grease and line a 22cm loose bottom cake tin.

  2. In a large mixing bowl, beat beetroot, eggs honey, vanilla extract, cocoa powder, baking powder and salt with an electric mixer.

  3. When these ingredients are thoroughly combined, fold in ground almonds.

  4. Place a heatproof bowl on top of a saucepan containing a little water. Make sure the bowl is big enough to cover the top of the pan but do not allow the bottom of the bowl to be in contact with the water. Put the chocolate pieces in the bowl and allow to melt over a low heat, them mix in the oil. Gently stir the chocolate and oil into the cake mixture until well combined.

  5. 5. Scrape the mixture into the prepared tin and bake in the oven for 35-40 minutes or until a skewer inserted in the centre comes out clean. Remove from the oven and leave the cake to cool in the tin before turning out onto a wire rack.

  6. Once the cake is completely cool, dust with cocoa powder. Serve on its own or with Crème Fraîche.
