Warm up with our Spiced Carrot Soup: a vibrant, comforting dish created by Trav, the head chef at Square One Rialto in Melbourne. Made using seasonal, quality produce, this recipe celebrates the natural sweetness of fresh carrots with just the right touch of spice.

Ingredients:

  • 5cm ginger sliced

  • 1 red chilli

  • 1 brown onion sliced

  • 1 kg carrots chopped (leave the skins on)

  • 2 peeled potatoes

  • 3 cloves garlic

  • 100ml orange juice

  • 100g butter

  • 2g turmeric ground

  • 2g cumin ground

  • 2g coriander seed ground

  • 1.5 lt water

  • salt & pepper to taste

Method:

  • Brown butter in large pan on medium heat. Once brown turn down heat to low

  • Add sliced onion, ginger, garlic to brown butter and cook till onions are soft

  • Add spices and carrots

  • Cover with water and orange juice

  • Bring to boil

  • Cook until carrots and potatoes are soft.

  • Blend soup till smooth and season with salt and pepper to desired taste

  • Enjoy with creme fraiche and a crusty baguette!
