Bright, punchy and full of crunch, this Daikon Radish Pickle is a creation from the chefs at Square 1. Made with peak-season produce, it's the perfect balance of sharpness and sweetness to elevate any dish.

Ingredients:

  • 1 x bunch daikon radish

  • 60g pink Himalayan salt flakes

  • 375ml apple cider vinegar

  • 80g caster sugar

  • 1 tablespoon coriander seeds

  • 1 teaspoon black peppercorns

    Method:

  • Thoroughly wash the radishes and thinly slice them (as if you’re eating them in a banh mi!)

  • Place radish, salt and 2 cups ice cubes in a large bowl and leave aside until required.

  • Bring vinegar, sugar, coriander seeds and peppercorns to the boil in a small saucepan or casserole.

  • Drain radish and add to the saucepan, bring liquid back to the boil and remove pan from heat.
