Bright, punchy and full of crunch, this Daikon Radish Pickle is a creation from the chefs at Square 1. Made with peak-season produce, it's the perfect balance of sharpness and sweetness to elevate any dish.
Ingredients:
- 1 x bunch daikon radish 
- 60g pink Himalayan salt flakes 
- 375ml apple cider vinegar 
- 80g caster sugar 
- 1 tablespoon coriander seeds 
- 1 teaspoon black peppercorns - Method: 
- Thoroughly wash the radishes and thinly slice them (as if you’re eating them in a banh mi!) 
- Place radish, salt and 2 cups ice cubes in a large bowl and leave aside until required. 
- Bring vinegar, sugar, coriander seeds and peppercorns to the boil in a small saucepan or casserole. 
- Drain radish and add to the saucepan, bring liquid back to the boil and remove pan from heat.
