Roasted Cherry Belle Radishes with Garlic & Thyme

A new way to enjoy radishes: Roasting Cherry Belle radishes softens their peppery bite and brings out a mellow, slightly sweet flavour. Tossed with garlic and thyme, they make an easy, vibrant side. Finish with a splash of lemon or balsamic for extra brightness.
Ingredients:
- 2 bunches of Cherry Belle radishes, trimmed and halved (keep some greens if fresh!) 
- 2 tbsp olive oil 
- 2–3 cloves garlic, smashed or thinly sliced 
- 1 tsp fresh thyme leaves (or ½ tsp dried thyme) 
- Salt and black pepper, to taste 
- Optional: 1 tbsp lemon juice or balsamic vinegar for finishing - Method: 
- Preheat oven to 200°C. Wash and trim the radishes. Cut them in half. If the greens are fresh and tender, set them aside to roast separately or sauté briefly at the end. 
- Toss radishes in a bowl with olive oil, garlic, thyme, salt, and pepper. 
- Spread them out on a baking tray in a single layer, cut-side down for best caramelisation. 
- Roast for 25–30 minutes, or until golden-brown and tender, shaking the tray or flipping them halfway through. - Optional: 
 Toss with a splash of lemon juice or balsamic vinegar before serving for brightness. Top with crispy radish greens, fresh herbs (like parsley or chives), or a dollop of yogurt or labneh.
