A new way to enjoy radishes: Roasting Cherry Belle radishes softens their peppery bite and brings out a mellow, slightly sweet flavour. Tossed with garlic and thyme, they make an easy, vibrant side. Finish with a splash of lemon or balsamic for extra brightness.
Ingredients:
2 bunches of Cherry Belle radishes, trimmed and halved (keep some greens if fresh!)
2 tbsp olive oil
2–3 cloves garlic, smashed or thinly sliced
1 tsp fresh thyme leaves (or ½ tsp dried thyme)
Salt and black pepper, to taste
Optional: 1 tbsp lemon juice or balsamic vinegar for finishing
Method:
Preheat oven to 200°C. Wash and trim the radishes. Cut them in half. If the greens are fresh and tender, set them aside to roast separately or sauté briefly at the end.
Toss radishes in a bowl with olive oil, garlic, thyme, salt, and pepper.
Spread them out on a baking tray in a single layer, cut-side down for best caramelisation.
Roast for 25–30 minutes, or until golden-brown and tender, shaking the tray or flipping them halfway through.
Optional:
Toss with a splash of lemon juice or balsamic vinegar before serving for brightness. Top with crispy radish greens, fresh herbs (like parsley or chives), or a dollop of yogurt or labneh.
