Introducing Pumpkin Hummus, a delightful twist on the traditional chickpea dip. This creamy blend combines the earthy flavour of roasted pumpkins with the classic ingredients of tahini, olive oil, and garlic, creating a gorgeous smooth texture.
Pumpkin Hummus offers a subtle sweetness that pairs perfectly with fresh veggies, crackers, or or as a base for dishes. Enjoy a taste of autumn in every bite!
Ingredients:
1 cup roasted or pumpkin puree
1 tin of cooked chickpeas
2 tbsp tahini
1 tsp cumin
1 large lemon (zest)
1/2 large lemon (juiced)
Pinch of salt and pepper
2 cloves garlic (minced)
1/4 cup extra virgin olive oil
*pumpkin can be substituted for carrot or beetroot; follow the same roasting method.
Method:
Chop beetroot into small chunks, marinade in olive oil and seasoning. Roast for 40mins or until tender.
Allow beetroot to cool before blending in food processor.
Add all ingredients to the food processor except the olive oil. Blend until smooth.
Drizzle olive oil as hummus is blending.
Taste and adjust seasonings, lemon juice and olive oil as needed.
Serve with veggie sticks, crackers or use as a sandwich spread.
*Store in the fridge and consume within the week.
